    Preheat the oven to 200°C. Peel the apples, quarter them and remove the cores.

    In an ovenproof pan, melt the butter with sugar over medium heat until a golden caramel forms.

    Arrange the apple quarters tightly in a rosette pattern in the caramel. Sprinkle with cinnamon.

    Cook on low heat for 10 minutes to candy the apples.

    Cover with puff pastry, tucking in the edges. Prick the top. Bake for 25 minutes.

    Remove from oven, rest 5 minutes, then flip onto a serving plate in one swift motion.
