Provençal Ratatouille

    Wash and dice all vegetables into even 2 cm pieces.

    In a large casserole, sauté the sliced onion and garlic in olive oil for 3 minutes.

    Add the aubergines and peppers. Stir-fry over high heat for 5 minutes.

    Add the courgettes and diced tomatoes. Stir in the herbes de Provence, season with salt and pepper.

    Cover and simmer on low heat for 40 minutes, stirring occasionally.
