    Mix the flour, yeast, and salt. Add the water and olive oil, then knead for 8 to 10 minutes until smooth and elastic. Cover and let rise for 1 hour, until doubled in size.

    Heat the oven as high as it will go, with a pizza stone or baking tray inside, for at least 30 minutes.

    Divide the dough into 2 rounds. Stretch each one, leaving the rim slightly thicker.
