Mix the flour, yeast, and salt. Add the water and olive oil, then knead for 8 to 10 minutes until smooth and elastic. Cover and let rise for 1 hour, until doubled in size.

Heat the oven as high as it will go, with a pizza stone or baking tray inside, for at least 30 minutes.

Divide the dough into 2 rounds. Stretch each one, leaving the rim slightly thicker.

Top with a thin layer of tomatoes, well-drained pieces of mozzarella, and a little Parmesan.

Bake for 8 to 12 minutes, depending on your oven, until the crust is deeply colored and the cheese is bubbling. Add the basil after baking and serve straight away.
