    Melt the chocolate with butter in a bain-marie. Let cool slightly.

    Separate the whites from the yolks. Stir the yolks into the melted chocolate one at a time.

    Whisk egg whites to stiff peaks, gradually adding sugar and a pinch of salt.

    Gently fold a third of the whites into the chocolate to loosen, then fold in the rest with a lifting motion.
