
Croque-Monsieur with Ham and Comte
The quintessential Parisian café sandwich: buttery toasted bread layered with ham, melting cheese, and a thin cap of béchamel for a bubbling golden finish.

Preheat the oven to 220°C.

Make the béchamel: melt 20 g butter, add the flour, and cook for 1 minute. Whisk in the milk, then cook until thickened. Season with salt, pepper, and nutmeg.

Spread 4 slices of bread with a little mustard. Layer on the ham and half the Comte, then close with the remaining slices.

Lightly butter the outside of the sandwiches. Place them on a baking tray.

Spread a thin layer of béchamel over each sandwich, then top with the remaining Comte.

Bake for 10 to 12 minutes, then broil for 1 to 2 minutes until the top is deeply golden and bubbling. Serve at once.
